A Smith Dilemma!

I can't be the only person who comes across the SMITH name and wonders what on earth to do for the best!

My grandmother's name was Emily Bessie SMITH, born 9 Mar 1904 in Enfield, Middlesex (now London) to William SMITH (a Carman to a Horse Dealer) and Emily Jane JAMES. William and Emily married on 11 Dec 1893 in Enfield, Middlesex in Jesus Church. William says he is a 25 year old Carman, with father of John SMITH (Deep joy!). Emily was only 18 when she married, giving her father as Edward JAMES, and on the 1891 census, she's shown as 15 living with her parents, Edward and Ann, in Enfield. Her occupation is given as Scholar which is surprising as they weren't well off - her father was a Cowkeeper! 
Anyhow, I give that extra detail because (assumption alert!) .... it doesn't look like she went very far? As a 15 year old, for instance, she wasn't living somewhere else in service.
As a couple living in Enfield, on the 1901 census, William SMITH is 31, a Labourer, and gives his birth place as Islington and on the 1911 census (still in Enfield), he's 40, a Process Man in a Lead Works, and still gives his birth place as Islington.
So far, so good!
Back many moons ago, long before doing the FutureLearn course, I'd done a search through the 1891 census in Enfield and found William SMITH, aged 22 and a Carman, living with John and Julia SMITH and giving the birth place of Islington. Eureka, I thought, that must be him! However, now I'm not so sure. 
From a Genealogical Proof Standard, can I be sure I have the right person?
The slightly varying ages on the documents I have indicate a birth date that could be between 1867 and 1871. I've done a search through the 1891 census, picking up William SMITHs with a birth of Islington and even just London. There are some that are on their own ie lodgers with no father named that are labourers or Carmen but they are a fair way into London. They are 'possibles' but what is the likelihood that Emily would have met one of them rather than the William just down the road? 
In 1891, Emily was living in Green Street, Enfield with William living on Main Avenue, Bush Hill Park, Enfield.
